Grilled Pineapple & Chicken Kebabs
They say everything tastes better on a stick, and they say everything tastes better on the grill, so it’s no wonder these kebabs are loaded with so much flavor. Alternating pineapple and chicken, each skewer is drizzled with a Hawaiian teriyaki-inspired sauce and grilled to sweet-and-savory perfection. Enjoy them as-is or add your favorite meat and veggies to the mix. Remember to save some sauce for dipping – you’ll thank us later.
Grilled Pineapple & Chicken Kebabs
- 1 lb. chicken breasts (cut into chunks)
- 1 cup pineapple (cut into chunks)
Sauce
- 1/3 cup pineapple juice
- 2 Tbsp. tomato sauce
- 1 Tbsp. soy sauce
- 1 tsp. coconut sugar
- 1/2 tsp. ground ginger
- 1/2 tsp. garlic salt
- 1/2 Tbsp. sesame seeds
- 2 Tbsp. green onions (chopped)
- Soak 6 to 8 wooden skewers in water for 10 minutes before grilling.
- On each skewer, alternate chicken and pineapple.
- Combine sauce ingredients. Pour sauce over skewers, reserving ¼ of the sauce for later.
- Place skewers on grill; cook until chicken is done, flipping halfway, 6 to 8 minutes.
- To serve, pour reserved sauce over skewers.
For a little spice, add sriracha or chili powder to the sauce.
