Our story began with a roadside produce stand run by our founder, the son of an organic farmer, in the heart of California's wine country. We've grown a lot since then, evolving into a line of premium oils and vinegars that are made using only the best olives, grapes, seeds or n uts from the finest orchards and fields around the world.

 

Ruby hued and just as vibrantly flavored, our Organic Red Wine Vinegar starts with Italian wine, aged in oak barrels. It's then kept unpasteurized to maximize flavor. We like how it brings a fruity bite to vinaigrettes and sauces, making dishes tart yet tasty!

Mediterranean Chickpea Salad with Roasted Sweet Pepper Dressing

Salad

  • 2 cans (30 oz.) chickpeas (drained, rinsed)
  • 1 can (14 oz.) artichoke hearts (drained, chopped)
  • 1 small sweet red pepper (medium dice)
  • 2 cups mini cucumber (peeled, small dice)
  • 1 cup grape tomato (cut in 1/2)
  • 1/3 cup Kalamata olives (pitted, coarsely chopped)

Roasted sweet pepper dressing

  • 2 roasted sweet red peppers (drained)
  • 3 Tbsp. red wine vinegar
  • 5 Tbsp. olive oil
  • 1/2 tsp. garlic powder
  • 1/2 tsp. sea salt
  • Fresh ground pepper (to taste)
  • Handful fresh parsley (basil and oregano leaves, or herbs of choice)
  1. Combine chickpeas, artichoke hearts, sweet pepper, cucumbers, grape tomatoes and kalamata olives in mixing bowl.
  2. In blender or blender jar, blend together roasted sweet peppers, red wine vinegar, olive oil, garlic powder, salt, pepper and fresh herbs until thoroughly combined and smooth.
  3. Pour dressing over chickpea mixture and toss to combine.
  4. Serve as is or on top of mixed salad greens.
