A re-sealable canister of gluten free old fashioned rolled oats. Rolled Oats are whole oat groats that have been steamed and rolled to a flat flake. While they can be used for a nice, thick oatmeal, they are more often used in baking.


Directions

Cooking Directions:

Servings 1 2 6
Water 1 cup 1¾ cups 5 cups
Oats 1/2 cup 1 cup 3 cups
Salt (optional) dash 1/8 tsp 1/4 tsp

Make on Stovetop

  1. Bring water and salt to a boil.
  2. Stir in oats slowly.
  3. Simmer 3-5 minutes over medium heat; stir occasionally.

Note: For creamier oatmeal, combine water, salt and oats; bring to a boil; cook as directed

 

Make in Microwave: (one serving)

  1. Combined water, salt and oats in a 1 quart (medium) microwavable bowl.
  2. Microwave on HIGH 2-4 minutes; stir before serving.

Honey Coffee Cake Muffins (Gluten-Free)

Muffins

  • 2-1/2 cups almond flour
  • 1 tsp. baking powder
  • 3 eggs
  • 1/2 cup honey
  • 1 tsp. vanilla
  • 2 Tbsp. olive oil
  • 2 Tbsp. butter (melted)
  • 1-1/2 cups almond milk

Streusel

  • 3 Tbsp. butter (melted)
  • 1/2 cup old fashioned oats
  • 1/4 cup pecans (crushed)
  • 1/2 tsp. cinnamon

Glaze

  • 1/4 cup coconut butter
  • 1/4 cup cashew butter

Optional: Lemon or orange zest

  1. Preheat oven to 350 degrees F. Place 16 paper muffin cups in muffin pans.
  2. In large mixing bowl, whisk together all muffin ingredients.
  3. Fill each muffin cup 3/4 full.
  4. In bowl, stir together streusel ingredients and portion equally over top of batter.
  5. Bake 20-23 minutes, until toothpick inserted in center comes out clean.
  6. In microwave-safe bowl, combine glaze ingredients and microwave on high 15 seconds; stir and drizzle over warm muffins. (Note: Add lemon or orange zest to glaze if citrus flavor is desired.)
