Gluten-Free Chocolate-Hazelnut Banana Bread

Made with ripe bananas and cassava flour, and sweetened naturally with maple syrup, this grain-free loaf skips refined sugar but delivers big on flavor. Optional poppy seeds add a nutrient-packed twist, while hazelnuts and chocolate chips provide the perfect crunch and sweetness. It’s a treat everyone can enjoy.
Gluten-Free Chocolate-Hazelnut Banana Bread
- 2 large very ripe bananas (or 3 medium size)
- 1/3 cup melted vegan butter (or dairy butter)
- 1/3 cup maple syrup
- 2 tsp. pure vanilla extract
- 2 organic eggs
- 3 Tbsp. plant-based milk (or dairy milk)
- 1-1/2 cups cassava flour
- 3 tsp. baking powder
- 1/2 tsp. Redmond Real Salt
- 1 Tbsp. poppy seeds (optional)
- 2 Tbsp. chocolate chips (plus more for top)
- 1/2 cup hazelnuts (chopped)
- 10 whole hazelnuts
- Preheat oven to 360 degrees F. Prepare an 8x5-inch loaf pan with parchment paper.
- In large bowl, mash bananas and add eggs, maple syrup, vanilla extract, butter and milk. Mix until completely combined.
- In medium-sized bowl, combine dry ingredients: flour, baking powder, salt and poppy seeds. Stir together.
- Transfer dry mixture to bowl with wet ingredients. Mix well.
- Add chopped hazelnuts and chocolate chips until incorporated.
- Transfer mixture to prepared loaf pan. Spread batter into even layer and sprinkle top with whole hazelnuts and some more chocolate chips.
- Bake about 50 minutes, or until toothpick inserted in bread comes out clean.
- Let cool 20 minutes before slicing.
