Wild Salmon Patties
[vc_row][vc_column][vc_column_text]Craving salmon? These lighter, better-for-you fried salmon patties are packed with flavor and nutrients, making them a perfect weeknight dinner. This recipe uses wholesome ingredients like almond flour, fresh cilantro and lemon to create a delicious and healthy twist on a classic dish. Fried in a small amount of coconut oil or avocado oil, these succulent salmon cakes thoroughly satisfy without leaving you feeling weighed down.
Wild Salmon Patties
- 2 cans (12 oz.) wild Alaskan salmon (wild Alaskan salmon)
- 1-1/2 tsp. Dijon mustard
- 2 scallions (chopped)
- 1/4 cup fresh cilantro (chopped)
- 1/4 jalapeño pepper (chopped)
- Black pepper (to taste)
- 1 lemon (juiced)
- 1/4 cup almond meal/flour
- 1 Tbsp. coconut oil (or avocado oil, for frying)
- In bowl, mix together all ingredients except oil and use hands to form into 8 patties.
- In large frying pan over medium-low heat, heat coconut oil or avocado oil and arrange patties. Fry about 5 minutes on each side until golden brown and slightly crispy.
- Serve with or over mixed greens, cabbage or kale.
Top with aioli or favorite dipping sauce.
