Air Fryer Apple Fritters

  • 2 cups peeled/grated granny smith or pink lady apples (2 apples)
  • Cooking spray

Dry ingredients

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 tsp. baking powder
  • ¼ tsp. salt
  • ¼ tsp. ground cinnamon

Wet ingredients

  • 2 Tbsp. unsalted butter (melted)
  • ½ cup apple cider
  • 2 large eggs (beaten)
  • 1 tsp. vanilla extract

Coating

  • ¼ cup granulated sugar
  • ½ tsp. ground cinnamon
  • 2 Tbsp. unsalted butter (melted)
  1. In 10 qt. (or larger) air fryer, cover inner basket with parchment paper and spray with cooking spray. Preheat air fryer to 350 degrees F.
  2. In large mixing bowl, mix together flour, sugar, baking powder, salt and cinnamon.
  3. Mix in apple cider, beaten eggs, vanilla and grated apples.
  4. Use ice-cream scoop to spoon batter balls onto parchment paper. Don’t overcrowd. (Note: Depending on size of air fryer, you may have to cook fritters in 2 or 3 batches.)
  5. Air fry for 5 minutes. Flip fritters and air fry another 5 minutes until golden-brown. Repeat with remaining batter.
  6. In medium bowl, mix together sugar and cinnamon.
  7. Slather fritters with butter on both sides. Roll one fritter at a time in cinnamon-sugar mixture until completely coated. Serve warm.

Notes

  1. If desired, squeeze juice out of grated apples to avoid watery batter. If batter gets watery, add tablespoon of all-purpose flour (or more) to thicken.
